This is our Trip! Combination of pale and wheat malts, with the addition into the mash of a special variety of coffee beans from our friends at Background Coffee roasters. European and American hops then get combined with some fantastic unique Aussie ingredients like wattle seeds and organic Tasmanian pepper added at the end of the boil. The result is a dry, clean and very sessionable Saison, with hints of coffee, citrus and spice.

A modern craft brewery without it's own India Pale Ale just wouldn't completely have it's raison d'etre.
At Nomad ours is Jet Lag IPA. As our Anniversary approached, we were pondering what limited edition beer we should brew to celebrate turning 1, and of course it was Jet Lag, with everything turned up to ELEVEN to create a DIPA version. That means almost double the hops, the malt the finger lime peel and we also switched to an American yeast strain to get more of that West Coast Double IPA vibe. Also, as we are always keen to experiment and try new things Supersonic Jet Lag is DOUBLE DRY HOPPED for extra hop pleasure....

What happens when three brewers get together for an insane brewing triangle? In May 2015 during the GABS festivities Leonardo from Birra del Borgo, Logan from Beavertown and Brooks from Nomad decided to brew something together that would be unique and would also let us experiment and explore new boundaries.
The Beavertown guy suggested basing the beer on top quality UK Malts, the Nomad guy suggested two native Australian ingredients Muntries and Bush Tomatoes, the Birra del Borgo guy suggested to make the beer quite big and then age it in a 40 year old grappa barrel straight from Italy for 6 months. The name of the beer? They all agreed on it straight away, it seemed so fitting!

This beer relies both on tradition and pure freestylin'.
UK base malts such as Maris Otter are known in the brewing world to deliver a distinct nutty smell and flavour plus give any Ale a top quality mouthfeel. Naked oats were also added to add a silky and almost chewy structure. Muntries are small apples native to Australia that are delicious and extremely aromatic. Bush tomatoes are another native ingredient, similar to actual tomatoes they are full of umami and have almost a bitter chocolate flavour.

Brewed as a special release for GABS 2015, Leonardo chose to bend the rules and standards of a classic European classic style and adding newly discovered aromas and flavors such as Australian grown organic Muscat raisins, native Desert Limes and Fresh Lemongrass.
Due to the success at GABS, Nomad partnered with BdB to brew a new batch of this fantastic beer.
A traditional classification for the farmhouse ales of France and their sometimes-untraditional new-world counterparts. Bière de Garde is today generally a warm fermented strong pale ale - sometimes blonde, sometimes amber, and has much in common with Belgium ales. Medium bodied with hints of caramel or toffee. Cellared smell and flavor are characteristics. The name means "beer for keeping".
Bières de garde may be one of the most underappreciated genres of beer. Though overshadowed by their Belgian counterparts, they are as complex and finely-crafted.

Couch Stout

We definitely needed a stout in our range of beers for the colder months, 'cause a chilly, overcast or rainy day just calls for some black stuff...
Leonardo wanted to create a 'coccola', a comfortable stout that you can put your feet up to!
Couch Stout is Nomad's interpretation of an Oatmeal Stout, one to enjoy while loafing about on your favorite couch.

Stouts with the addition of oats are generally medium to full bodied stouts that have an unreal smoothness to them from the addition of oats to the mash. The oats not only add a lot of smoothness to the mouth feel, but give a touch of sweetness that is unlike any other type of stout.
Couch Stout is slightly roasty, loaded with cocoa flavours and malty with enough warmth and chewiness to make you feel cuddled but still quaffable enough to drink a few.

Secunda PILS

American brewing legend Bill Covaleski of Victory Brewing Co. joined us in May 2015 for a collaboration beer and he was open to any ideas. We asked him if he could share some thoughts and knowledge about his own brewery and specifically enlighten us about Prima Pils, such a heavenly drop! We then decided together to brew a Pilsner here at Nomad in a similar fashion to Prima Pils but using only Australian hops, in the whole cone form (flowers) just like they do at Victory. The name is Secunda Pils ( prima means first in Latin, secunda means second) and the result is a perfect connection between brewers from opposite sides of the world focusing and re-interpreting a classic style of beer.
The brewing system and piping at Nomad isn't specifically designed for the use of whole flower hops, which resulted in some clogging, swearing and fear of the beer turning out well... But Secunda Pils is tasting amazing and in the end it was a very fun day with Bill brewing it.

Pilsner is one of the youngest yet most popular beer styles in the world. It was originally brewed in Plzen, Czech Republic in 1842 and was an immediate hit. Many breweries have recreated the beer and used the name pilsner, which is the name of the brewery where it was originally brewed (Pilsner Urquell), to describe the style.
Interestingly, the water we receive here in Brookvale is quite similar to the water of Pilsen, which is very light in calcium and other minerals typically resulting in a crisp, clean and light bodied beer.
The Australian hops stand out as very clean and not far from their German and Czech counterparts but with a
recognisable southern hemisphere touch with hints of grass and slight stonefruit. Not your typical PILS!,

An interesting collaboration between Nomad and Stone Brewing (California-U.S.A.). Brewing legend Mitch Steele helped us out to create a unique Rye IPA. Mitch's knowledge on IPAs and hop dosing in general is beyond awesome and we at Nomad are grateful to him for teaching us some of his secrets.
Two American and Two Australian popular hops were added to the boil.

The image – Take the Stone classic Gargoyle logo, combined that with the spirit of the Nomad. Brewing an India Pale Ale, with a bit of a red Rye Evil edge.. and your Indian Gargoyle is born!

The Name: AIR being all things NOMAD style and keeping within the Nomadic theme (air - planes), RYE for the obvious ingredient - Red Rye style. Evil for all things Stone and the iconic gargoyle . The name came from initially thinking of the STONE arrival to Nomad. A true group effort in creating the name that involved the entire Nomad team, Mitch from Stone, Nick from Crafty and the Sessionable crew, Liam and Adrian..

Rye is known to deliver somewhat of a peppery spiciness to beers and is usually added at around 20% of the total grain bill to really come through, which is exactly what we did to benefit from Rye aromas and flavors. The hops come through big and resiny, West Coast Style!
This collaboration will be one to be remembered for sure.

Freshie Salt & Pepper
STYLE: GOSE - Using real sea water harvested from Fresh Water Beach - Sydney

This beer is the brain child of Leonardo and Brooks, after a few.... staring at the beautiful Ocean in Freshwater, on Sydney’s Northern Beaches, the ocean mist and its fantastic smell had to be somehow put into a beer.... Why not add sea water directly to the beer and hey isn't salt what they add to traditional Gose in Germany??!! A few months later here we are at Nomad adding two buckets of salt water straight from Freshie to a Gose with a Nomad twist and adding our new favorite pepper variety from Tasmania.

Gose is an historical style of beer brewed in the town of Leipzig, Germany. Unfortunately there are only two traditional breweries still brewing Gose in its own town. Craft beer has often resurrected and given a new life to forgotten but beautiful and interesting beer styles like this one.

Traditionally Goses are slightly tart, savoury and spicy ( coriander), and light in body and ABV.
At Nomad we tried to get as close as possible to traditional Gose as far as malts, yeast and salt dosage and we obviously gave it our very own Italo/Aussie character adding sea water and Tasmanian pepper.

A dark brown ale loaded with tasty caramel, toffee and a slight hint of roasted malts. This collaboration beer was fermented with a British ale yeast strain which typically leaves a pleasant malty flavor after fermentation. Part of the whole idea behind brewing together was to find a local or native ingredient that would be fun and interesting to add to a beer. Riberries or Lilly Pilly fruits were chosen for their their slight tartness and notes of cinnamon and clove. New Zealand and Australian hops were added to add to the complexity and overall balance to this intriguing brew.

Poco Loco in the Coco

A collaboration beer between NOMAD and The Local Taphouse. Staff from the Sydney venue spent a whole day at the brewery and worked on developing the recipe with the brewers, whilst indulging in plenty of beer to allow their creativity to flow freely. The key ingredient they wanted for this beer was coconut, so organic coconut flakes were added at the very end of the wort boil along with Ella and Cascade hops.

Hazy golden in color. Hints of coconut on the nose and palate that match very well with both tropical fruit esters from the Belgian yeast strain and the melon and citrus hop flavors. At 5.4% ABV it is easily sessionable yet surprisingly interesting, given the 'slightly' unusual ingredient that was involved in this beer, coconut!

This beer starts out as an American wheat ale, a famous style that involves wheat malt as well as barley in the mash. Instead of being fermented with a very characterizing yeast in the German style of wheat beers this one was brewed with a more neutral American ale yeast strain. The perfect ground to allow us add something unique and really stand out. Shane and Brooks chose Australian native lemongrass, which is quite different from its Thai counterpart. Australian hops do the rest and give this beer distinct character and exceptional drinkability

This beer has been one of our most popular through the tasting room of late, and is a great option for the current hot weather.  Jet Lags little brother. Essentially a beer that was born from experimentation with our base JetLag IPA but it got hijacked using a Belgian yeast strain to develop into a whole new beer altogether.  Low ABV but packing a punch with an IBU of 40, and dry hopped with loads of Victroia's Secret's and Galaxy. The name refers to Leonardo and his travels, and how sometimes things just don't go as planned, long story.... In the end this beer will not be lost for long!  A small beer packing a big taste
